It was surprisingly easy! Very sticky, but pretty easy. Here's the recipe:
butter or non-stick spray for greasing 300-400g icing sugar (I'm 100% sure I didn't use nearly this much, since it's pretty much just for dusting) 225ml cold water 20g powdered gelatine 400g granulated sugar 240ml golden syrup (I guess it comes in a light colour, but mine was pretty dark, but made white marshmallows anyway, surprisingly) 1/4tsp salt 2tsp mint extract (or 2tsp vanilla extract, 1/2tsp almond extract, 2tsp lemon or orange extract) (I used orange oil).

I'm not sure what it means to grease a baking sheet and then put down silicone baking paper. I've never even heard of silicone baking paper. And why grease a sheet if you're gonna put something over top? So here's what I did. I had a silicone baking PAN, with about 2 inches up the sides, totally square, so I just greased and powdered that instead. Easy peasy.
Also, I wondered why, when I put it in the pan, and it was not pouring out to the edges (damn, this stuff is sticky and stiff), why it says I can just spatula it out to the edges, but it sticks so much. Solution: keep the spatula damp. In fact, anything you're gonna have touch the sticky bits, except the bowl and beater, keep it damp by running it under a tap before you use it. I used kitchen scissors to cut up mine, which works just fine, but next time, I'll use a pizza slicer.
I just realized this says it makes about 20 spares. Damn, that batch made over 50! I'll try to get more pictures soon...
